The Boutari Winery, with its distinctive white dome, first operated in 1989, and has played a leading role in the viticultural development of the island. Open to the public, it offers its visitors a complete guided tour. The Boutari Winery is filled with the magical aura of the island of Santorini and promises to be a thrilling experience!

Location
On the most -unique island of the Cycladic Islands, Santorini, we find the Boutari Winery on the road to Faros, past Akrotiri. Evidence and testimonies of viticultural activities date back to the pre-historic phase of the island, before the great volcanic explosion around 1.500 BC. In the mid 1980s, the Boutari company began its active involvement with the vineyards of Santorini, one of few vineyards that has never been affected by phylloxera.

Identity
With the intuition of an experienced Greek wine-producer the Boutari company identified yet another important viticultural zone with great potential and important prospects for the production of high quality wines. Its primary objective was to put establish the qualitative standards required for the production of "VQPRD Santorini" and to apply vinification practices unknown in that region, until that time.

The privately-owned vineyard covers an area of approximately 6 hectares, was planted for the first time in 1992 and plantation was completed two years later. The estate is located in the southern, “warm” side of the island. A prominent characteristic of the estate is the fact that it has been sparsely planted, with about 2500 vines per hectare.

The prevalent conditions of the microclimate are quite particular. The altitude begins at 105 and reaches 140 metres. The temperatures are lower than those of the surrounding islands of the Cycladic Islands, rainfall is rare and winds blow at a great speed. For this reason, the plants are pruned low, in the shape of a basket. The grapes are grown in the center, and are thus protected from the strong winds. They absorb and maintain humidity from the dense night fog. The soil is sandy, of volcanic nature, and covered with scoria, lava and pumice stone. These particular to the area conditions result in a relatively limited production, early ripening and good hygiene conditions for the grapes.

The varieties selected were mainly local white varieties, such as Assyrtiko, Athiri and Aidani, and few others that are experimentally cultivated.

The winery is open to the public. The wine-tasting of Santorinian wines, in combination with the local dishes, as well as a journey back in time to the history of the island and to the rebirth of the vineyards of Santorini through a multimedia show of image and sound, put together a truly unforgettable experience.
