Vinification
The grapes are transported to the wineries, they are destemmed, they are crushed and the alcoholic fermentation begins. Maceration with the skins lasts only 12-20 hours, time sufficient for the color and aromatic ingredients to be picked up. The juice after “pulling”, separating it from the skins, continues to ferment at low temperatures, 14 ° C. Alcoholic fermentation is interrupted by the application of cooling, so that the wine retains residual sugars which give it its sweet taste. It is then transferred to the storage tanks where it remains until it is bottled
