At an altitude between 170 meters and 215 meters, on a 7 hectare plot, the privately owned Boutari vineyard hosts Greek and international varieties.
The site of the vineyard was very carefully selected on the north side of the hill in order to protect the vines from ‘’Livas’’ the warm southern wind , while at the same time allowing the cool winds ‘meltemia’ of the Cretan sea. The soil type is clay, limestone, with good drainage.
The vineyard includes both international and local varieties, since Chardonnay and Syrah, Vidianos, Malvasia Aromatica, Asyrtiko, Kotsifali and Moschato Spina among others.
The vineyard was also used as an "experimental vineyard" since many varieties such as Mavratragano, Asyrtiko and Aidani were first cultivated on a small part of the vineyard to see their acclimatization to the area and test the production they yield.
