The most recent and aesthetically modern Boutari winery was completed in the beginning of 2004. Built outside Skalani village on the Fantaxometocho estate. It is located 8 km outside the center of Heraklion city, 4 km from the archaeological site of Knossos, and is the jewel of the viticultural PDO region of Archanes.

The Fantaxometocho estate otherwise known as “Haunted Vineyard”, owes its name to the efforts of its former owner to save it from pirate raids, by spreading the rumor that ghosts reside in the estate.

Βοutari started the planting of the vineyard in the 1990’s. The bibliographical references confirm the close relations of the region with viticulture and the production of wine in antiquity.

The discovery of the first grape press in the Vathypetro area, dates back to 1600 BC.

The main objective of Boutari was to set the foundations for further promotion of Cretan wine worldwide, through the production of high quality wines. In a region that was famous for its ecosystem and its tradition in viticulture, Boutari managed to enhance the potential of local varieties and made Cretan vineyards known to the public, through major distinctions.

At an altitude between 170 meters and 215 meters, on a ​​7 hectare plot, the privately owned Boutari vineyard hosts Greek and international varieties.

The site of the vineyard was very carefully selected on the north side of the hill in order to protect the vines from ‘’Livas’’ the warm southern wind , while at the same time allowing the cool winds ‘meltemia’ of the Cretan sea. The soil type is clay, limestone, with good drainage.

The vineyard includes both international and local varieties, since Chardonnay and Syrah, Vidianos, Malvasia Aromatica, Asyrtiko, Kotsifali and Moschato Spina among others.

The vineyard was also used as an "experimental vineyard" since many varieties such as Mavratragano, Asyrtiko and Aidani were first cultivated on a small part of the vineyard to see their acclimatization to the area and test the production they yield.

A  wine cellar and an impressive wine tasting room are waiting for you at the winery's premises, where you have the chance to taste current and past wines produced on the Estate, as well as Experimental vinifications of the estate accompanied by Cretan Cuisine recipes.

In the spring of 2015 the Boutari winery in partnership with Aria Hotels, opened to the public the Scalani Hills Boutari Winery and Residences. The three luxurious residences are surrounded by 70 acres of vineyards and are housed in the old Metohi, completely renovated with absolute respect to the surrounding area of ​​the estate. You can choose among the rooms “’Kotsifali’’, ‘’Malvasia’’ or ‘’Liatiko’’ and spend a night or more at a magical place.
